Ratatouille Recipe ~

Ingredients-

  • 6 tablespoons olive oil
  • 3 onions chopped
  • 4 garlic cloves mince
  • 2 medium to large, peeled eggplants, diced
  • 2 green peppers, diced
  • 8 medium zucchini, sliced
  • 6 tomatoes, chopped, or 1 (28-ounce) can whole peeled tomatoes, drained and chopped
  • 1 (6-ounce) can tomato paste
  • 1 cup water
  • 1 cup chopped fresh parsley
  • 1 cup chopped fresh basil
  • salt and pepper to taste
Directions-
  1. In a large Dutch oven, heat the oil. Add the onions, garlic, eggplant, and peppers. Saute' until the vegetable are limp. (about 8 minutes)
  2. Stir in the zucchini, tomatoes, tomato paste, and water. Heat to boiling. Reduce heat to medium, cover, and cook for about 15 minutes.
  3. Add herbs, and salt/pepper to taste. Continue cooking uncovered for about 10 more minutes.
  4. Cool for 1 hour, stirring often.
Serves 10-12. May be served hot or cold. Can be a vegetarian main dish. Or stir in 2-3 cups of chopped, cooked, turkey or chicken.
